Here is another one of my favorite recipes just in time for Thanksgiving.  Everyone I have ever made this for has absolutely loved it.  It is super easy to make and will be a winner at your table for sure.  It is called Sweet Potatoes with Topping, but it is not your ordinary sweet potato casserole!
Sweet Potatoes with Topping

3 cups mashed cooked sweet potatoes
( I use the caned ones; they work great and save time)
1/2 cup sugar ,1 tsp vanilla
1/2 cup milk

For the Topping :
1/3 cup flour, 1/3 cup margarine
2/3 cup firmly packed brown sugar
1/4 chopped nuts (I don't use the nuts in mine and it is still great!)

  • Butter a 2 qt baking dish.
  • Combine potatoes, sugar, vanilla and milk.  Pour into prepared baking dish
  • Mix together flour, brown sugar  - cut in margarine until mixture resembles course crumbs. Stir in nuts (if desired) Sprinkle topping  over potatoes
  • Bake uncovered at 350 for 30 minutes
You can find this great book online at Amazon.com.  It is an older book 1993, reprinted in 1998 so I don't think you can find it in normal book stores any longer.  Every recipe in it that I have every tried is Awesome!
